DIT 103 - Nutrition Assessment

Description
This course introduces students to the application of the basic principles of normal nutrition, dietary standards and interpretation of nutrition labels. Students learn how to collect and interpret data to be used by a Dietetic Technician, Registered (DTR)/Nutrition and Dietetics Technician, Registered (NDTR) or made available to a Registered Dietitian (RD/RDN) for interpretation. This course includes assessing diet histories, calculating nutrient composition of diets to evaluate proportions of macronutrients/micronutrients, planning the quality and quantity of the food and nutrient intake of individuals, comparison of food intake to dietary standards, introduction of the Nutrition Care Process, assessment, diagnosis, intervention, monitoring and evaluation (ADIME) format and basic nutrition assessment skills. This course requires a per credit health career fee; check the tuition and fee schedule for the current rate.
Learning Outcomes
Upon successful completion of the course, the student will:

  1. Use current information technologies to locate and apply evidence-based guidelines and protocols (KNDT 1.2).
  2. Apply critical thinking skills (KNDT 1.3).
  3. Demonstrate effective interviewing and education methods for diverse individuals and groups (KNDT 2.2).
  4. Use the Nutrition Care Process for nutrition screening for referral to the registered dietitian nutritionist, collection of assessment data, nutrition interventions and monitoring strategies appropriate for the technician level of practice. (KNDT 3.1)
  5. Develop an intervention to effect change and enhance wellness in diverse individuals and groups.  (KNDT 3.2)
  6. Evaluate information to determine if it is consistent with accepted scientific evidence. (CNDT 1.2)
  7. Exhibit interviewing techniques for data collection.
  8. Engage in medical Record simulation to practice interpretation and documentation of data.
  9. Determine individual nutrient needs using standard calculations.
  10. Compare food intake to dietary standards.
