CLR 202 - Food Serv Spec-Garde Manger 1 Credits: 3 2 Lecture Hours 2 Lab Hours A course in special Garde-Manger techniques such as ice and tallow sculpturing. Manipulation of tools is emphasized. Buffet showpieces such as watermelon baskets, table arrangements of fresh fruits and vegetables, and accent decorative showpieces are made. The art of pulled sugar is introduced.
